EASIEST PEANUT BUTTER FUDGE EVER
While on the topic of desserts, I MUST share this recipe with you guys courtesy of Upsider Ashleigh Burk (my sister-in-law). It's the easiest and arguably yummiest peanut butter fudge you'll make. Just two ingredients!
  • One jar of peanut butter
  • One jar of vanilla frosting (not whipped)
Put both ingredients in microwave-safe bowl, then melt for about a minute. Remove and stir, then microwave a little bit longer, about another minute. Pour mixture into 9x9 glass baking dish. Easier if lined with parchment paper. Smooth out, then refrigerate until hard. Cut into pieces!

I chose that Walt Disney quote at the beginning of this newsletter because I'm headed to the Magic Kingdom later this week with my husband and daughter. It's now been three months since my mom died and we are in need of some extra magic this holiday season. Sometimes we have to search for the magic, but often we can create it ourselves by practicing gratitude. I have no clue why it was my mom's time to go, but even on my darkest days I can still find so much to be grateful for. If you're in a similar place emotionally, I hope you can create some magic this holiday season, too. Xoxo, Katie.
